Nothing says comfort food like a Loaded Corn Casserole! Sweet corn, melty cheese, smoky bacon, and a zesty Cajun kick — baked to golden perfection. Loaded Corn Casserole is the ultimate side dish for your next holiday, Sunday dinner or any occassion. It goes great with any meat.

Ingredients

• 6 slices bacon
• ½ cup butter, melted
• 2 tablespoons bacon grease
• 1 box (8.5 ounce) corn muffin mix - sweet cornbread
• 1 can (15 ounce) corn, drained
• 1 can creamed corn
• 3 green onions, thinly sliced
• 1 large egg, beaten
• 1 cup sour cream
• 2 cups Monterey Jack cheese, shredded
• 1 teaspoon Cajun seasoning

Directions

1. Preheat oven 350°F (177°C).
2. Grease 13 x 9 -inch baking dish with cooking spray.
3. In a skillet over medium heat, cook 6 slices of bacon, turning periodically until crisp. Save 2 tablespoons of the bacon grease.
4. When bacon is cool enough to handle, crumble bacon and set aside.
5. In a large mixing bowl, add melted butter, saved bacon grease, corn muffin mix, drained corn, creamed corn, green onions, egg, sour cream, shredded cheese, and Cajun seasoning. Stir well to combine.
6. Pour into the prepared baking dish.
7. Bake in 350°F (177°C) oven until lightly browned (40- 45 minutes) and center springs back when lightly touched.
8. Let casserole cool for 5 minutes before serving.
