Chicken and Dumplings

Old Fashion Chicken and Dumplings is a traditional dish made with chicken, fresh vegetables, and topped with fresh homemade dumplings.

Chicken Ingredients

• 2 large chicken breasts cooked and chopped = 3 cups
• ½ small onion chopped
• 1 large carrot chopped
• 1 stalks of celery chopped
• 2 cartons (32 ounces) chicken broth
• 1 tbsp garlic
• 1 tbsp salt
• 1 tbsp pepper
• 1 chicken bouillon cube

Dumplngs Ingredients

• 3 cups self rising flour
• 3 tbsp shortening
• 1½ cups of milk

Directions for Cooking Chicken

1. Rinse off the chicken breast.
2. In a 6 quart stockpot, pour in the chicken stock and add the chicken breast.
3. Turn the heat on, and add the vegetables: celery, carrots, and onions.
4. Add the chicken bouillon Cube.
5. Add the salt, pepper, and garlic.
6. Boil for about 30 minutes until the chicken is done.
7. Take out the chicken and lay on a plate to cool.
8. When chicken breasts have cooled off, remove the skin, debone, and chop the chicken up.
9. Add the chicken back into the pot. Add more chicken stock if needed. Turn the heat up.

Let's make the dumplings

1. Cut shortening into flour until it looks like small Pebbles (I use a fork).
2. Add milk and stir until all is mixed together.
3. Put some flour on the countertop (or cookie sheet or wax paper makes easier clean up) so the dough won't stick.
4. Place the dough on the floured countertop.
5. Sprinkle some flour on top of the dough and press the dough flat.
6. Cut the dough into strips.
7. Turn the heat up so that the chicken broth mixture starts to boil.
8. Pinch the dough and make balls and place them on a plate until you have made about 40 to 50 balls made.
9. Start gently dropping the dough balls into the chicken broth until pot is full.
10. DO NOT STIR at this time. Instead, move the pot back and forth and turn the heat down to simmer.
11. Put the lid on the pot and cook for 30 to 40 minutes.
12. DO NOT LIFT LID ... move the pot back and forth. If you lift the lid and stir the dumplings they will turn to mush.
13. After the cooking time has been completed take the lid off and dumplings should be done.
14. Stir the pot with the chicken, vegetables, and dumplings.
