Directions
Season roast with salt and pepper.
Place the roast in the slow cooker.
Sprinkle on the dry Italian-style salad dressing mix all over the roast.
Add the onion slices.
Pour the jar of Giardiniera over the roast.
Add two bay leaf.
Pour the beef stock over roast.
Cover and cook on Low for 10–12 hours or on High for 4–5 hours, until the beef is tender.
Discard the bay leaves.
Shred the the meat. I used meat claws and finished up with forks.
Serve with a bowl of hot savory cooking juices called Au jus on a Italian-style roll making for a flavorful experience. The Au jus is made from the strained beef's cooking juices and Italian seasonings in the bottom of the Crock-Pot.
