Cake Ingredients

• 2 cups sugar
• 4 eggs, beaten
• 2 cups flour, plain
• 2 teaspoons baking powder
• 1½ teaspoons baking soda
• 1½ teaspoons salt
• 2 teaspoons cinnamon
• 1½ cups oil
• 2 cups grated carrots
• 8 ounces crushed pineapple, drained
• 3½ ounces coconut
• 1 cup of nuts pecans, chopped

Frosting Ingredients

• 1 stick (½ cup) butter (at room temperature)
• 1 package (8 ounce) cream cheese (at room temperature)
• 1 teaspoon of vanilla
• 16 ounces Confectioners 10-x Powdered Sugar

Cake Directions

1. Preheat oven 350°F (177°C).
2. Grease and flour the cake pans (2 - 9 -inch or 3 - 8 -inch).
3. Sift flour, baking soda, baking powder, salt, and cinnamon. Set aside.
4. Cream sugar and eggs together well.
5. Add oil, flour mixture, carrots, pineapple, nuts, and coconut blending thoroughly.
6. Pour cake mixture into two 9-in pans equally. Gently tap each cake pan on the countertop before baking to remove air bubbles in batter.
7. Bake at 350°F (177°C) for 30 to 40 minutes or until toothpick inserted in center comes out clean.
8. Cool cake layers in pans for 5 to 10 minutes. Hot out of the oven cake layers are very tender and more likely to break or crumble.
9. Place first cake layer in the center of cake plate.
10. Frost the top only of the first layer.
11. Place second cake layer centered on the first cake layer.
12. Frost the top of the second layer and sides of all layers.

Frosting Directions

1. Cream butter and cream cheese together well.
2. Add vanilla and mix together.
3. Add sugar and mix thoroughly till there is no lumps.
4. Add a little milk if frosting is too thick.
