Banana Nut Bread is very tasty and satisfying. The combination of sweet bananas and crunchy nuts creates a unique flavor and texture that is comforting. This is a classic recipe that combines ripe bananas, nuts, flour, sugar, and other ingredients to create a super moist and flavorful bread.

Ingredients

• ½ cup butter, softened
• 1¼ cups sugar
• 2 eggs, beaten
• 1½ cups mashed very ripe bananas (3 to 4 medium)
• ½ cup buttermilk
• 2½ cups all-purpose flour
• 1 teaspoon baking soda
• 1 teaspoon salt
• 1 teaspoon vanilla
• 1½ cup chopped pecan nuts (½ cup goes on top)

Directions

1. Move oven rack to lower position so that tops of pans will be in center of oven.
2. Preheat oven 350º.
3. Grease 2 loaf pans: 8½ x 4½ x 2½ inches or 9 x 5 x 3 inches.
4. Mix sugar and butter in large bowl.
5. Stir in eggs until well blended.
6. Add bananas and buttermilk. Beat until smooth.
7. Stir in flour, baking soda, salt, and vanilla extract. Mix thoroughly.
8. Stir in nuts.
9. Pour into pans and smooth out mixture.
10. Sprinkle ½ cup of nuts on top of each loaf.
11. Bake in 350º oven for 40-45 minutes or until cake tester inserted in center comes out clean
12. Cool 10 minutes.
13. Loosen sides of loaves from pans and remove from pans.
14. Place top side up on wire rack.
15. Cool completely (about 2 hours) before slicing.
