Sweet Alabama Pecan Bread is a good old-fashioned Southern treat, loaded with sweet, buttery flavor and the hearty crunch of pecans in every bite. Ingredients

• 1 cup white sugar
• 1 cup packed brown sugar
• 1 cup vegetable oil
• 4 eggs, lightly beaten
• 1 teaspoon vanilla
• ¼ teaspoon salt
• 1½ cups self-rising flour
• 2 cups small pecan pieces

Directions

1. Move oven rack to lower position so that tops of pans will be in center of oven.
2. Preheat oven 350°F (177°C).
3. Grease two 8½ x 4½ x 2½ inch loaf pan (or one 13 x 9 inch baking dish).
4. Mix together white sugar, brown sugar, oil, eggs, vanilla, and salt in a large mixing bowl.
5. Stir in flour.
6. Add in pecans.
7. Mix until well blended.
8. Spread evenly in loaf pans.
9. Bake for 35 minutes or until a toothpick inserted in the center comes out clean.
10. Cool in the pan on a wire rack for 30 minutes.
11. Loosen sides of loaves from pans; remove from pans and place top side up on wire rack.
12. Cool completely (about 2 hours) before slicing.
